Whole Foods Chicken Bowl
A Nourishing, Nutritious Salad Bowl
A fresh, colourful bowl of goodness, this chicken salad bowl is the perfect lunch or dinner option. Packing in protein, healthy fats and fibre, this bowl is full of nutrients and nails those macros.
Recipe & Method
You will need:
2 medium free-range chicken breasts
1 small avocado
1 medium cucumber
200g of cooked beetroot
A handful of cherry tomatoes
Seasoning of choice (my favourite is the Mingle Everything Seasoning)
Half of a lemon
A sprinkle of fresh parsley
Chop up the chicken breasts into strips and add them to a hot non-stick frying pan. Sprinkle over a generous amount of seasoning and cover with a lid for the chicken to cook. After a few minutes, turn the pieces over, cover in more seasoning and pop the lid back on for another few minutes until the chicken is cooked through.
Chop the avocado, cucumber, tomato and beetroot and arrange in two bowls.
Add the cooked chicken to the bowls, drizzle over some fresh lemon juice and sprinkle some fresh parsley on top.
