Morning Apple Crumble

Dessert for breakfast? Yes please.

Stewed cinnamon apple with a gluten-free, maple granola crumble, topped with high-protein, vanilla yogurt. This breakfast is an absolute treat.

Recipe

For the stewed apple:

  • 6 pink lady apples

  • 1 tsp cinnamon

  • 1/4 cup water

For the crumble:

  • 1/2 cup almond meal

  • 1/2 cup shredded coconut

  • 60g / 1 cup soy or whey protein crisps

  • 1/8 cup pepitas

  • 1/8 cup sunflower seeds

  • 4 tbs maple syrup

  • 3 tbs coconut oil

On the side

  • 160g high protein yogurt (I use vanilla Chobani fit pots)

Method

  1. Preheat the oven to 180 degrees, fan-forced

  2. Chop up the apples into cubes and place in a saucepan

  3. Add the water and cinnamon to the apple and simmer for 5 minutes

  4. Meanwhile, add in the dry crumble ingredients to a bowl and mix together

  5. Melt the coconut oil in the microwave, add in the maple syrup and stir together

  6. Drizzle the maple syrup and coconut oil over the dry ingredients and mix together

  7. Once the apple is soft, lay it evenly in a medium baking dish

  8. Sprinkle the crumble over the apple

  9. Put the dish in the oven and bake for 30 minutes or until the crumble is golden

  10. Serve with 170g of high-protein vanilla yogurt
