Lemon Zucchini Curls

Gorgeous, Fresh, Zesty and Bright

These fresh ribbons of zucchini, spritzed in lemon juice and olive oil and sprinkled with parsley, are the perfect side to any main.

Recipe & Method

You will need:

  • 3 medium zucchinis

  • Half a lemon

  • 2 tablespoons of extra virgin olive oil

  • A sprinkle of fresh parsley

Using a peeler, peel the zucchinis length-ways to create long thin ribbons. Roll each ribbon up to create little rolls and arrange them on a plate. Splash over some extra virgin olive oil and some fresh lemon juice and sprinkle with salt flakes and fresh parsley.
