Greek Lemon and Garlic Chicken

Classic Greek Chicken

The combination of garlic, zesty lemon and fresh mint makes for a delicious main, paired perfectly with some roast potatoes, a fresh greek salad and a big dollop of my herb tzatziki.

Ingredients

  • 2 large chicken breasts

  • 1/2 cup greek yogurt

  • 1 lemon

  • 3 garlic gloves

  • Salt flakes

  • 1/2 bunch of mint

Method

  1. Finely chop the garlic cloves and add to a bowl with the yogurt

  2. Grate the rind of the lemon and add half to the yogurt and keep half to the side

  3. Add the juice of the lemon to the yogurt mixture

  4. Add a generous sprinkle of salt flakes and mix together

  5. Slice the chicken breasts into thin pieces and add to the yogurt marinade, mixing until all of the chicken is covered in the yogurt

  6. Marinate for 2-4 hours

  7. In a hot pan, add a splash of olive oil and fry the chicken until cooked through

  8. Arrange the chicken on a plate with the mint leaves and sprinkle over the remaining lemon rind and some salt flakes

  9. Serve with some roasted potatoes and a fresh side salad and enjoy!
