Grated Beetroot and Parsley Salad

Earthy, Raw Beetroot Salad

This earthy, crunchy, raw beetroot salad is the perfect nutritious side to a main, mixed in with a salad or packed into a sandwich or wrap.

Recipe & Method

You will need:

  • 2 large, raw beetroots

  • Half a bunch of fresh parsely

  • 2 tablespoons of extra virgin olive oil

  • Salt to taste

Peel and grate the beetroots into a bowl. Chop the parsley and add it to the beetroot. Drizzle the olive oil and sprinkle salt flakes over the beetroot and then mix together.

Store the beetroot in an air tight container for up to a week.
