Air Fryer Salmon and Honey Dijon Veg
A one (air fryer) basket wonder.
This easy dinner is a week night winner. Chop and chuck it all in an air fryer, then mix through dijon mustard and honey. It’s that easy and so damn delicious.
Ingredients
2 x 115g salmon fillets
325g Spud Lite potatoes
1 large red capsicum
1 large green capsicum
1 medium zucchini
1 bunch broccolini
2 heaped tbs of dijon mustard
1 tbs honey
Chilli flakes and salt flakes to taste
Method
This meal essentially involves chopping all of the vegetables, then adding them into an airfryer at 200 degrees at the below times:
Chop the potatoes into 2cm cubes, spritz with avocado oil, and add to the airfryer at 200 degrees for 10 minutes
After 10 minutes, add the chopped capsicum and zucchini to the potatoes, mix with some tongs, and put the basket back in the airfryer for 6 minutes
Once the timer is up, add the salmon on top of the vegetables and put back in the air fryer for 5 minutes
After 5 minutes, add the chopped broccolini around the salmon and put back in the air fryer for 4 minutes
After 4 minutes, take the salmon fillets out of the basket and place to the side
Empty the basket of roasted vegetables into a bowl, add the dijon mustard, honey, chilli flakes and salt and mix together so the condiments are mixed through the vegetables
Divide into two bowls, place the salmon on top and enjoy!
