Air Fried, Rosmary Potatoes

Warm, seasoned potatoes, perfect with any main

These lower carb potatoes are the perfect way to hit your macros while getting your carb fix. Seasoned, warm and sprinkled in fresh rosmary, they are the perfect side to grilled fish, slow cooked lamb or any other whole food main.

Recipe & Method

You will need:

  • 750g Spud Lite potatoes

  • A sprig of fresh rosmary

  • Seasoning of choice (my favourite is the Mingle Garlic and Herb or Everything Seasonsing)

Chop the potatoes up into quarters so they are about 2cm in length. Sprinkle over a generous amount of seasoning and salt and pop them in the air fryer for 20 minutes at 200 degrees, tossing them around the basket every 5 minutes to make sure they cook evenly. After 15 minutes, break up the rosmary and add it to the potatoes. Cook for the remaining 5 minutes.

Once cooked, add the potatoes to a bowl, sprinkle over some sea salt flakes and serve.
